Who doesn't love cake?! Oh wait, my friend Dave doesn't. Seriously, that's just weird. But I am pretty sure he isn't completely human.
I've derailed. This is the cake that I made for my hubby's birthday. Red Velvet Strawberry vodka cake.
Cake:
1 package red velvet cake mix (any brand)
1/4 t. strawberry extract.
Prepare cake according to directions for the two 9" cake pans. Add extract. Bake for time required. Turn out of pan, cool on rack.
Next...
Since we are making a LAYERED cake, we gotta have something go between the layers, right?! Place bottom cake on your cake plate (I have one of those really groovy tupperware ones that keep the cake FOREVER. Don't have one? Invest, it's worth it!). Make sure you have your cake where it is going to stay... arranging and frosting it then realizing you have to move it is a pain in the patootie. Next, take a fork or toothpick and poke holes all over the bottom layer cake. After holes are poked, drizzle a little (or a lot) of Cupcake brand Devil's Food Cake vodka over it, and allow it to soak in.
Then...
Take about 1/3 cup of strawberry jam (brand not important) and spread that on the bottom layer cake.
Third...
Place second cake directly on top of jam. Do the same thing with the fork and vodka to the top layer.
Now for the frosting!
1 tub of plain white frosting. I suppose you could use cream cheese frosting too, that might be good.
1/3 t. strawberry extract
1.5-2 T of the Devil's Food Cake vodka.
Mix all these together really well. Spread over COOLED cake evenly with flat spatula. Even better if you have one of those frosting spreaders. Gotta get me one of those.
Finally...
Take a plain old chocolate bar (I think I used a Hershey bar) and, using one of those mini cheese graters, grate the chocolate over the top to give it that cute sprinkly look.
Voila!
